Owners of the Liholiho Yacht Club in San Francisco, the Morning Wood in San Mateo, Cyrus in Napa and Pomet in Oakland are among those that have replaced gratuity with an automatic fee to pay workers more equitably. Despite the growing trend of service charges, the change has been met with pushback and confusion from both servers and diners.
